Apple Cake (with soured milk or kefir)

This week I decided to try another apple pie recipe. This time it was with soured milk or kefir. It turned out to be tasty and worth publishing:). I adapted it from  http://www.liveinternet.ru/.  So let's get started...

Inspirational Note on health benefits...
In this section we are going to talk about the health benefits of the main ingredient apples. Let's see what The Condensed Encyclopedia of Healing Foods (by Michael T. Murray, Joseph Pizzorno, Lara Pizzorno) says about it.
According to it “In an analysis of more than eighty-five studies, apple consumption was shown to be consistently associated with a reduced risk of heart disease, cancer, asthma, and type 2 diabetes compared to other fruits and vegetables… Apples are also very high in pectin, a soluble fiber that has been shown to exert a number of beneficial effects. Because it is a gel-forming fiber, pectin can lower cholesterol levels as well as improve the intestinal muscle’s ability to push waste through the gastrointestinal  tract.”(Read more...)

So to make this pie we will need:

Preparation: 15-20 min.
Cooking time: 45-50 min.
Serves: 8-10.

Apples: 2 (medium)
Kefir (soured milk): 1 glass (250 ml)
Sugar120 gr (about half of 250ml glass)
Flour: 240 gr (1,5 of 250 ml glass)
Eggs: 2
Butter: 50 gr
Vanilla sugar: 2tsp
Baking powder: 1 tsp

Whisk eggs with the mixer.
Mix in sugar, vanilla sugar, baking powder, kefir (soured milk) and flour by adding it gradually.

Melt butter and add it to the mixture. Make sure it is warm and not hot.

Cut apples into quarters and remove the core.
Cut them into small slices.

Lightly oil the pan, add half of the mixture. Add apples.
Cover them with the other half of the mixture.

Bake the pie in preheated oven at 180 degree C for 45-50 min.

Once the pie is done baking, remove it from the oven. Let the pie cool to room temperature before slicing.

Enjoy it!
