Apple Sponge Cake

I am still trying different apple cakes or pies and ... here is another recipe of apple sponge cake.  I adopted it from www.millionmenu.ru It turned to be deliciously light and fluffy. And I liked apples in it. You should give it a try!

According to it “In an analysis of more than eighty-five studies, apple consumption was shown to be consistently associated with a reduced risk of heart disease, cancer, asthma, and type 2 diabetes compared to other fruits and vegetables… Apples are also very high in pectin, a soluble fiber that has been shown to exert a number of beneficial effects. Because it is a gel-forming fiber, pectin can lower cholesterol levels as well as improve the intestinal muscle’s ability to push waste through the gastrointestinal  tract.”(Read more...)

So to make this sponge cake we will need:





Preparation: 15-20 min.
Cooking time: 45-50 min.
Serves: 6-8.









Apples: about 500 gram
Sugar: 100 - 120 gr (about half of 250ml glass)
Flour: 140 gr (about one 250 ml glass)
Eggs: 3-4
Butter: 10 gr
Vanilla sugar or extract (optional): 2tsp


Beat eggs with sugar until they are light and creamy.

Carefully sieve and fold in flour.


Mix in vanilla sugar or extract (optional). 






Grease a baking pan with a little bit of butter.


Quarter, peel apples, cut out the core. Cut quarters into slices. 


Place them at the bottom of the baking pan. Pour the cake mixture over them.








Bake the cake in preheated oven at 180 degree C for 40-50 min.


Once the cake is done baking, remove it from the oven. Let it cool to room temperature before slicing.
